The cold weather is upon us, there's nothing better than a good bowl of warm soup. This week, we present
you with a recipe featuring local
and seasonal produce. Zeste.tv's famous carrot and ginger soup!
It's the perfect appetizer for a night out with friends or your next family dinner, and it's full of nutrients and flavor.

Here are the required ingredients:
Ingredients
15 mL (1 tbsp.) butter
15 mL (1 tbsp.) olive oil
30 mL (2 tbsp.) fresh ginger
chopped fresh ginger
2 small yellow onions, peeled
and coarsely chopped
1.5 L (6 cups) chicken stock
or vegetable stock
910 g (2 lb) carrots, peeled and
and sliced into rounds
Salt and pepper to taste
15 mL (1 tbsp.) lime juice
or lemon juice
30 mL (2 tbsp.) chopped fresh coriander
chopped fresh coriander (optional)
Preparation
In a large saucepan:
Sweat the onions for 3 to 4 minutes
in the butter and oil.
Add the ginger, carrots and
cook for another 5 minutes.
Stir in broth and simmer for 30 minutes on medium heat or until carrots are tender.
Puree soup in food processor
or with a blender foot.
Strain through a sieve.
Season with salt and pepper.
Garnish with coriander and citrus juice.
Serve!
