This gratin is creamy, moist and full of flavour. It is a perfect side dish or an excellent main course, as well as being a vegetarian option.

Ingredients

1 medium-sized winter squash
such as butternut or acorn

2 tablespoons unsalted butter

1 onion, diced

2 cloves garlic, minced

1/2 cup vegetable stock

1/2 cup heavy cream

1 cup grated Gruyere cheese

Salt and pepper to taste

Fresh herbs, such as thyme or parsley,
for garnish (optional).

 

Preparation

Preheat your oven to 400°F (200°C).

Cut the squash in half lengthwise and 
lengthwise and remove the seeds.

Cut the squash again into quarter inch
thick slices.

Melt butter in a large saucepan over medium heat. Add onion and garlic, and sauté until onion is softened, about 5 minutes.

Add squash slices to the pan and toss
to coat with butter and onion mixture.

Add the vegetable broth and heavy cream, 
and stir to combine.

Bring mixture to a simmer and cook
for about 10 minutes, or until squash
is tender.

Transfer the squash mixture to
a baking dish and sprinkle the
grated Gruyere cheese on top.

Bake the gratin for about 10 to 15 minutes, until the cheese is melted and bubbly.

Serve the gratin hot, garnished
with fresh herbs if you like.

 

Preparation: 20 minutes
Baking: 30 minutes
Portions: 4-6 minutes
